An easy take on the classic Egg Benedict! This one has poached egg above a tower of spinach, nutmeg and avocado paste. Topping it all is delicious Hollandaise along with a fruit phyllo basket cup.
Ingredients of Californian breakfast
- 2 thick slices Brioche loaf
- 1 Tbsp Avocado paste
- 2 Eggs
- 1 Tomato, sliced
- 50 Gram Spinach
- A pinch of Nutmeg powder
- 1 Phyllo pastry sheet
- 100 Gram Assorted seasonal fruits
- 2 Tbsp Hollandaise sauce
How to make Californian breakfast
1.Toast the slices of brioche - and keep it warm.
2.Have a small pot of water boiling and break the egg to poach.
3.Place the grilled tomato slices over brioche, assemble a tower with wilted spinach along with nutmeg, avocado paste and poached egg on top.
4.Drizzle sufficient hollandaise sauce over and serve with fruit phyllo basket cup.
