1. Choose The Right Flour

Every kind of flour has different amount of gluten that decides the strength and texture of the cake. For instance, if you want a light, airy cake, go for all-purpose flour. But, if you are looking for a firm or dense cake, bread flour should be your pick. 

2. Use Fresh Ingredients

Old foods and over-ripened fruits may not ooze the exact flavour we want them to. Remind yourself to use fresh ingredients, especially baking powder and baking soda to obtain their potent binding and rising properties.

3. Measure Accurately

Baking is an intricate process. Make sure you follow the recipe to the T and use the exact proportions of ingredients like flour, sugar, water, milk, baking powder, starch etc.

Your cake could be too dry or too soft because of improper measurements. Use measuring cups or weighing scale to get it right.

4. Mix Well

There must have been many times that you make a cake and it has hollow crests all over it. Then you end up covering those holes with frosting, which might not be your original idea of cake decoration. Isn't it better to prevent the holes in the first place? 6. Let It Cool

If you won't let your cake cool adequately, it might build cracks, melt the frosting or worse – it can collapse! After taking the cake out from the oven, let it sit on the cooling rack for at least an hour before decorating it.
